Arroz Rojo


Spanish rice, also known as Mexican rice or arroz rojo, is a Mexican side dish or an ingredient in other dishes made from white rice, tomatoes, garlic, onions, etc. The name Spanish rice is only used in the US; it does not originate in Spain.

Ingredients

  • 1 cup long grain rice
  • 2 roma tomatoes
  • 1/4 small white onion
  • 2 garlic cloves
  • 1 Tbsp chicken bullion
  • 1 Tbsp tomato bullion
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 7 tbsp of vegetable oil
  • 2 cups water

Preparation

  1. Add everything except the rice and vegetable oil to a blender. Blend until smooth
  2. Add oil to sauce pan and heat to medium high.
  3. Add rice and stir constantly until the rice is browned – golden color.
  4. Turn heat down to lowest setting and add mix in broth from blender
  5. Taste and add more seasonings if desired
  6. Cover with lid and steam for 20 minutes. Don’t open the lid or mess with it.
  7. Turn off heat and fluff with fork. Don’t mush it up.
  8. Leave for another 5 -10 minutes and serve.
