Lefse is a traditional soft Norwegian flatbread. It is made with flour, can include riced potatoes,[1] and includes butter, and milk, cream,[2] or lard.[3] It is cooked on a large, flat griddle. Special tools are used to prepare lefse, including a potato ricer, long wooden turning sticks and special rolling pins with deep grooves
ingredients
3 cups mashed potatoes
1/3 cup butter
2 tablespoons whipping cream
2 teaspoons sugar
1 teaspoon salt
½ teaspoon baking powder
1 ¼ cup flour
Add butter, cream, sugar and salt to hot mashed potatoes and mix well. Chill thoroughly before adding flour & baking powder. Roll out each lefse on floured pastry cloth. Bake on ungreased heavy griddle
