Goma ae


Goma in Japanese means sesame seed and goma-ae is a dish that’s dressed with the sesame sauce. The word ae (pronounced as [ah EH].

You can make goma ae with spinach or green beans or anything you like.

Ingredients

  • 1 Bunch of spinach (or 10 oz frozen pkg)
  • Pinch of salt
  • 3 tbsp sesame seeds
  • 2 tsp sugar
  • 4–5 tsp soy sauce
  • 1 tsp sake or mirin

Preparation

  1. Bring a pot of water to a boil and place spinach in stem side first.
  2. Cook the spinach for 30 seconds and then immediately strain and rinse with cold water. Squeeze out excess moisture and water.
  3. Gather the spinach and roughly chop the spinach 3-4 times and then place it into a bowl.
  4. Toast the sesame seeds in a pan.
  5. Add the toasted sesame seeds to a motor and roughly grind the sesame seeds (does not have to all be ground).
  6. Add the sugar, soy sauce and sake/mirin and mix together in the mortar.
  7. Pour the dressing over the spinach and toss together. Serve and enjoy!
