Refried beans is made with beans like pinto beans, black beans or kidney beans. Refried beans is either served as a part of the main course or stuffed in a tortilla or tacos. Refried beans can also be served as a dip with nachos
Ingredients
- 2 lbs dried Pinto beans (or bean of choice)
- 9 Cups water
- 1 medium sized onion – finely chopped
- 2 garlic cloves
- 3 Tbsp chicken bouillon
- 1 Tbsp cumin
- Salt
- Pepper
- Vegetable oil or Lard. Flavor with any additional fat if desired (i.e. Chorizo).
- 1 cup + Shredded cheese (Mexican blend)
- Small handful of Cojita cheese
Preparation
- Add beans to water in a big pot
- Add onion, garlic, bouillon , cumin, salt, and pepper to the pot
- Cook for 2 1/2 – 3 hours on a medium heat. Add more water if needed to keep the beans moist
- Cook until soft.
- Melt 3 Tbsp oil or lard in sauce pan
- Move the bean into to sauce pan and smash with smasher to desired texture
- Add cheese as desired. You can add a lot.
- Sprinkle some Cojita cheese on top
