Spanish rice, also known as Mexican rice or arroz rojo, is a Mexican side dish or an ingredient in other dishes made from white rice, tomatoes, garlic, onions, etc. The name Spanish rice is only used in the US; it does not originate in Spain.
Ingredients
- 1 cup long grain rice
- 2 roma tomatoes
- 1/4 small white onion
- 2 garlic cloves
- 1 Tbsp chicken bullion
- 1 Tbsp tomato bullion
- 1/2 tsp cumin
- 1/2 tsp salt
- 7 tbsp of vegetable oil
- 2 cups water
Preparation
- Add everything except the rice and vegetable oil to a blender. Blend until smooth
- Add oil to sauce pan and heat to medium high.
- Add rice and stir constantly until the rice is browned – golden color.
- Turn heat down to lowest setting and add mix in broth from blender
- Taste and add more seasonings if desired
- Cover with lid and steam for 20 minutes. Don’t open the lid or mess with it.
- Turn off heat and fluff with fork. Don’t mush it up.
- Leave for another 5 -10 minutes and serve.
